Moroccan Couscous with Delicious Taste

Want your meals to get a bit different tonight? Prepare deliciously yummy couscous specially made in the Moroccan way with saffron sprinkles to enhance the taste. Here is how to prepare this delectable dish.

1.Peeled butternut mash, 2 cups

2.Yellow onions chopped into cubes of ¼ and ½ sizes, 2 cups

3.Carrots cut into large cubes of ½

4.Zucchini cut into small cubes of ½ and ¼ , 1 ½ cups

5.Virgin Olive cut 2 table spoon

6.Sea salt, 1 ½ teaspoon

7.Black pepper grounded

8.Vegetable consommé, 1 ½ cups

9.Earth balance Butter, 2 tablespoon

10.Ground cumin, ¼ teaspoon

11.Saffron threads, ½ teaspoon

12.Whole wheat couscous, 1 ½

13.2 Scallions chopped in white and green parts

Preparation:

Heat the oven to about 375° prior to the preparation. Take a baking sheet and keep the squash, carrots, zucchini and onions and toss all of them in virgin oil. While doing this also add 1 teaspoonful of sea salt and 1 teaspoon of pepper. Roast the mixture for 25-30 minutes and while this goes on, turn the roasted side once. In the meanwhile boil the vegetable consommé in separate pot. Now add butter and stir the mixture and also add the residue of pepper, salt, cumin, salt and saffron. Now cover the pot with a lid and keep it aside for around 15 minutes. Rub the roasted vegetable and keep aside the juice of the roasted veggies. Now add the couscous to the boiled vegetable consommé. Cover the vessel with a lid and keep it aside for another 15 minutes. Now add on the scallions and once again toss the vegetables and the couscous and serve.
